IT GOES without saying that ideally we'd like our wine to be made as naturally as possible. Good health all round please. However, while many wine producers proudly claim to be doing things organically, or biodynamically even, only some are up for what it takes to get their wines officially certified as such… and even fewer are comfortable about submitting their wines to one or more of the top panels to be judged ‘blind'. Being organic only goes so far in making a wine desirable. It should also taste great: top quality and interest value, then the back story. Not the other way around, surely?!
